As diabetics we all know the pitfalls of eating too many carbohydrates. We’re all fairly aware of the fact that we should limit the consumption of carb-heavy foods, we hear it from doctors, nutritionists, our friends and family (ugh!). The internet is cluttered with information about low-carb and carb-free diets. We know it’s something we should take into consideration, but it’s easier said than done.
But what if some of that conversation was reversed?
